With the lac 1 protein removed, RNA polymerase binds to the promotor region, causing transcription to occur. While transcription occurs, the enzyme B-galactosidase can be produced, it's job being to break down lactose into simple sugars (glucose and galactose) After all the lactose molecules are broken down, the Lac 1 protein returns to its original shape, no longer bended, and binds back to the promoter region; preventing RNA polymerase from binding to the promoter and stopping transcription.
