How are edible fats and oils formed

As they are esters they are formed from the condensation reaction of glycerol with three fatty acid molecules (carboxylic acids) each molecule of the alcohol condenses with 3 molecules of fatty acid (R1, R2,k R3 are long carbon chains which can be the same or different)
